Thierry Niziolek has found a beautiful plot of 1.5 hectares on the terroirs of Heuvelland. The 9,000 vines per hectare are planted on sandy clay soil with iron slag. The Pinot Noir is grown with the greatest respect for nature.
The harvest is carried out manually in small crates to preserve the grapes as much as possible. The rest takes place in the cellar next to the plot. The pressing is done under low pressure to gently extract the juice. The vinification takes place in stainless steel barrels. This beautiful bubble promises to compete with the greatest champagne.
In the glass we have very fine bubbles with a light golden colour. In the nose we first have nice notes of apples and quinces that then evolve into slightly buttery and brioche notes. In the mouth the attack is very fresh, broad, but also with a lot of finesse. Everything is nicely balanced with a long, mineral finish. It’s a bubble that you can serve as an aperitif, but it will also sublimate crustaceans or raw fish.
