2014 Cour des Dames Cabernet Sauvignon, Languedoc-Roussillon, France, Pays d'Oc

Catherine and Laurent Delaunay are responsible for the making of the wines of La Cour des Dames. Both received training as oenologist, and they also come from a family that for generations has been winegrowers. They gained experience in California and Burgundy. In 1995, they established themselves as independent winemakers near Nuits -Saint -Georges in Burgundy. Pretty soon they were also passionate about the wines from the south of France. Through their experience with varietal wines (wines made with only one grape race) they had the know-how to create very nice wine for an attractive price.

For an interesting complexity and perfect balance, the Delaunay selected grapes from four different areas. The Hautes Cévennes for freshness, the plain of the Hérault for the roundness, the hills of the Aude for the fruits and the foothills of the Pyrenees (Limoux) for the structure.

This wine is made from 100% Cabernet Sauvignon. The grapes are sourced from high altitude vineyards in the Aude and the Cevennes. The first area creates grapes with power and structure, the second with roundness and fruitiness. 10% of the wine is aged in small oak barrels, the rest in stainless steel to preserve its freshness. After maturing, both wines are assembled for bottling.
