2014 Les Celliers de la Pauline Blanc, Eric Louis, Loire Valley, France, Sancerre AOC
It all began with Pauline, the great-grandmother of Eric, who in 1860 sold her wine in markets. "Les Celliers de la Pauline” (Pauline’s Cellars) owe their name to her.
Nowadays it is Eric Louis who creates the family wines with the same love and respect for the vine.
It is the diversity of the soils of Sancerre, Pouilly-Fumé, Menetou-Salon and Quincy which give the richness and complexity to their wines. The area covers thirty-two Ha around Thauvenay on the southeast hills of Sancerre.
They fight, in the most biologically way available, against diseases and parasites and practice grassing in the vineyards in order to restore balance and structure to the soil. After being carefully sorted, the grapes are pressed slowly in a pneumatic press to extract the best fruit. The juice is then transferred into stainless steel tanks for fermentation in a progressive and controlled temperature.
