Billecart-Salmon Brut Rosé, Champagne, France, Champagne
This champagne rosé is a blend of chardonnay, pinot noir and pinot meunier vinified in white wine and Pinot Noir vinified as red wine alone. This is added after disgorging of the wine and gives the wine its pink color. (disgorging: literally the removal of the 'throat' (neck) of the coagulated yeast cells in the bottle).
The history of this house of Champagne, located in Mareuil-sur-Ay, starts in 1818. Nicolas Francois Billecart marries Elisabeth Salmon. Today, it is the 7th generation responsible for viticulture and the production of these beautiful champagnes. They own 30 hectares of vines, but they also buy grapes from farmers who have been since a long time under contract. Billecart-Salmon champagne is found on the best wine menus in many famous restaurants. The reason is that their champagnes combine very well with fine cuisine.
