Château Moulin du Cadet is a family-owned property, located in the northwest of Saint-Emilion, on the famous plateau of Cadet . Producing space is limited with its 4.6 hectares . Isabelle and Pierre Blois Moueix own the domain that already had an excellent reputation in the 19th century. The soil contains a lot of lime which is guarantee for excellent drainage , under the surface we find a layer of clay . Since 2006 they have been working under a certificate guaranteeing organic viticulture, while from 2008 on they officially work under biodynamic culture also certified. They get oenological support from Alain Moueix who owns the famous Château Fonroque, also a Grand Cru Classé in Saint-Emilion.
The grapes undergo a strict selection . The alcoholic fermentation takes place in concrete vats, which are fully back in vogue since recent years. The average age of the vineyard is 35-40 years . The wine matures 12 to 18 months in French oak barrels , of which 50% are renewed each year. The composition is quite exceptional being100% Merlot.
