2012 Domaine Le Portail Cheverny, Loire, France, Cheverny
Carpaccio of scallops with lime
Preparation time: 20 minutes
Ingredients (for 6 persons):
- 18 scallops fresh or frozen (without coral)
- 15 tablespoons of olive oil
- 2 limes
- Fresh ginger
- 1 tablespoon of liquid honey
- Salt and pepper
Preparation:
- Slice the scallops thinly (if they are fresh, put them 20 minutes in the freezer in order to slice them easier).
- Wash the lime to remove the zest and peel the ginger and then grate it finely.
- Prepare the vinaigrette with olive oil, lime juice and honey.
- Put the scallops on plates and drizzle with the dressing. Sprinkle with lime zest and grated ginger. Salt and pepper.
- Cover the plate with plastic wrap and put them in the fridge for at least 30 minutes.

This Domaine is a former monastery where viticulture has been practiced for centuries.
Currently, DOMAIN LE PORTAIL is family owned, totaling 32 hectares of vines: 2 ha of Court-Cheverny, 29 ha in Cheverny White, Rosé and Red and 1 ha of CREMANT de LOIRE.
Since 2000, the Domaine adopted the principles of viticulture'' Terra Vitis'' which is environmentally friendly and based on observation.
The wines are vinified in the traditional way to keep their authenticity and promote the specifications of their soil.
