2012 Les Olivets, Domaine Roger Sabon, Côtes-du-Rhône, France, Châteauneuf-du-Pape
The wines are the fruit of an intimate dialogue between the winemaker and each parcel of land. In the mystery of the cellars, Didier and Jean-Jacques Sabon extract, according to a secret alchemy, the subtle potential of the vineyard.
The vinification is carried out according to the requirements of a centenary knowledge , preserving flavors and oriented to express all the flavors of each grape variety. Clay and limestone soil and pebbles.
Grenache is the main grape variety, completed by Syrah and Cinsault.
Rigorous selection of grapes at harvest. Vinification in vats with temperature control . Fermentation, lasting around twenty days, allows progressive extraction of tannins, through the practice of daily pumping over and cuts.
The wine is matured in 40hl casks for a period of 15 months.
