The winery Allée Bleue is located in the Franschhoek wine region (Paarl). The winemaker Van Zyl Du Toit aims to make fine wines with plenty of character combined with elegance.
Allée Bleue Estate was founded in 1690 under the name "Mere Rust". After the change of property to the present owners, Mr. and Mrs. Dauphin, the farm name was changed to Allée Bleue - which refers to the eucalyptus-lined entrance to the estate. The name also stands for the owners’ personal philosophy of life: a big respect for the nature on our blue planet.
The selected grapes from the pristine growing areas of Franschhoek, were hand-sorted before they were crushed. For 4 days, they were soaked in order to optimize the color and the fruit potential, followed by fermentation in stainless steel vats at a temperature of 28°C. This was followed by a malolactic fermentation in barrels continued by maturing the wines for 14 months in French oak barrels, of which 60 % are annually renewed.
