2010 Chardonnay, Limited Collection Laborie, Cape, South-Africa, Paarl
Nestled in the heart of the Paarl Mountains, this historic, original French Huguenot wine farm offers visitors an unforgettable experience. Purchased in 1972 by KWV*, the wine estate boasts a beautiful Manor House, an historic Wine Cellar, Guest House and Laborie Restaurant, in addition to the production of top quality wines and a brandy.
The grapes were handpicked in the vineyards. The juice was fermented with a combination of indigenous and commercial yeast strains. Only partial (10%) malolactic fermentation was allowed to preserve maximum varietal and fruit expression. The wine was left on extended lees contact for 90 days after fermentation and stirred regularly during this period. Thereafter it was racked and placed back into French oak barrel for maturation for another 9 months (50 % new, 30 % of 1 wine, 20 % of 2 wines).
