2012 Centine Rosé, Banfi, Tuscany, Italy, Toscane IGT
Recipe: Salmon tartare Italian style
Preparation time: 10 minutes
Ingredients (for 4 persons):
- 600g of salmon
- 2 yellow peppers
- 1 lemon
- 5 tbls of olive oil
- tabasco
- 50g of capers
- 8 green olives
- pepper and salt
- chopped flat-leaf parsley
Cut the salmon and peppers into dices and the olives into small pieces.
Mix the olive oil, peppers, olives, capers and tabasco in a bowl and season to taste with salt and pepper. Then add the diced salmon and lemon juice. Stir everything together and leave to rest in the refrigerator for 30 minutes. Garnish with the chopped parsley.
We advise you to accompany this dish with a glass of Centine Rosé.

The Centine Rosé takes its name from a 19th century farmhouse on the Castello Banfi estate. It is a rural Tuscan dwelling characterizedby its many stone arches, called ‘centine’ in Italian. Their appealing character is perfectly reflected in this Centine Rosé.
The grapes are coming from vineyards situated in the hillsides located in the southern part of Tuscany. The soil is calcareous and well drained.
The grapes are vinified for 14 days, with brief skin contact, in stainless steel tanks at 17,8°.
