The Domaine Daniel-Etienne Defaix, located in Chablis, is one of the oldest estates in the region, with roots dating back to 1610. Covering 28 hectares, it is mainly planted with Chardonnay on typical Kimmeridgian soils, rich in clay-limestone marl and oyster fossils.
True to family traditions, the estate practices natural winemaking with long fermentations and extended aging on fine lees, without the use of new oak. This approach gives the wines remarkable complexity and aging potential, faithfully reflecting the Chablis terroir.
