2008 Cuvée Olivier, Domaine Navarre, , France, Saint-Chinian
Thierry Navarre is the third generation of winemakers. His passions? Vines, nature, growing plants especially the vine, making wine, sharing it with friends together with good food in a warm atmosphere.
The domain covers twelve hectares of vines planted on large terraces of brown shale. The environment is a ring of small mountains covered with oaks, arbutus, heather, rosemary, thyme ... The landscape is a jewel of the haut Languedoc.
The culture of the vine is done with great respect for the earth, cycles and seasons. They do not use chemicals but only compost, natural preparations, infusion of plants, soil labour. Manual harvesting in a small team of 7 people.
The Cuvée Olivier is a very natural wine from very old vines of Carignan, Grenache and Syrah.
20hl/ha yields. Ripening of 12 months in oak barrels of 500 liters
